Earl Grey Lemon Posset

This easy 4-ingredient Earl Grey Lemon Posset combines bright lemon and fragrant Earl Grey tea for a silky, creamy British dessert that is perfect for afternoon tea and other occasions. It's a sophisticated dessert with minimal effort!

Ingredients
  

  • cup heavy whipping cream cream 35% fat content
  • 1 tablespoon earl grey tea loose leaf or 2 earl grey tea bags
  • 2 tablespoons granulated sugar
  • 2 tablespoons fresh lemon juice

Instructions
 

  • In a small saucepan, add heavy cream and granulated sugar. Heat on medium-low, stirring until sugar dissolves. Bring to a boil.
  • Add earl grey tea leaves or earl grey tea bags. Simmer and steep for 5 minutes.
  • Remove the saucepan from the heat. Strain the loose tea leaves or remove the tea bags. Stir in the fresh lemon juice then set aside to cool for 10 minutes. 
  • Pour the mixture into teacups or lemon halves, dividing evenly. Cover and place in the refrigerator for at least 2 hours to set and thicken.
  • Garnish with lemon zest and fresh mint, if desired. Serve and enjoy!

Notes

Serving & Storing Instructions: These tea infused lemon possets can serve 3-4 people, depending on the size of the teacups used or if using lemon halves. Also, they should be stored covered in the refrigerator. They will be best if consumed within 3 days.
