Cherry simple syrup is vibrant and juicy with a natural cherry essence that can enhance drinks and desserts. The tartness of cherries is balanced by sweetness. Make a batch with just 3 basic ingredients and store it in the fridge!
In a small saucepan over medium-heat, combine the washed, pitted and halved cherries, water and granulated sugar.
Bring to a boil then reduce heat to a simmer. Simmer for 15 minutes, stirring occasionally to make sure the granulated sugar dissolves. You can also use a potato masher to mash the cherries as they are cooking into the syrup.
Remove the syrup from the heat and pour it through a fine mesh strainer to remove the cherries. The leftover cherries can be saved instead of throwing them away. Mix into iced teas, ice cream, oatmeal or top pancakes and waffles.
Allow the syrup to cool before storing in an airtight container in the fridge for up to 3 weeks.
