Carrot Ginger Tea Sandwiches

These easy Carrot Ginger Tea Sandwiches are full of great flavour with minimal ingredients. Naturally sweet carrot paired with zesty ginger offers a unique combination for afternoon tea or lunch time.

Ingredients
  

  • 4 slices of white bread
  • 1 medium carrot peeled and grated (approximately ½ cup)
  • 2 teaspoons minced ginger
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste

Instructions
 

  • In a small mixing bowl, combine the grated carrot, minced ginger, mayonnaise, salt and pepper. 
  • Spread half of the carrot-ginger mixture on a slice of bread and top it with another bread slice to close the sandwich. Repeat this step with the other 2 slices of bread.
  • With a serrated knife, remove the crust and cut each carrot ginger tea sandwich into 3 rectangles or another shape, if desired. 
  • Serve and enjoy immediately!
