These easy Carrot Ginger Tea Sandwiches are full of great flavour with minimal ingredients. Naturally sweet carrot paired with zesty ginger offers a unique combination for afternoon tea or lunch time.
1medium carrotpeeled and grated (approximately ½ cup)
2teaspoonsminced ginger
2tablespoonsmayonnaise
Salt and pepperto taste
Instructions
In a small mixing bowl, combine the grated carrot, minced ginger, mayonnaise, salt and pepper.
Spread half of the carrot-ginger mixture on a slice of bread and top it with another bread slice to close the sandwich. Repeat this step with the other 2 slices of bread.
With a serrated knife, remove the crust and cut each carrot ginger tea sandwich into 3 rectangles or another shape, if desired.
Serve and enjoy immediately!
