Sweet, tart and bold apple flavours for fall vibes. This butterfly pea flower tea mocktail is made with apple juice, syrup and sparkling water to create an eye-catching layered drink. It is a tasty and impressive herbal tea mocktail to share with others!

Instructions
Steep butterfly pea flower (loose leaf tea or tea bags) in freshly boiled water for 7 minutes. Cover the herbal tea while it is steeping.
Remove the loose leaves or tea bag and discard after the steeping process is complete. Let the butterfly pea flower tea cool then chill in the refrigerator, approximately 1 hour.
To serve, start by rimming a glass with sugar. Wet the rim of a glass with apple juice or syrup then place the glass upside down in a dish of granulated or coarse sugar. I used a blue cocktail sugar for this drink, but plain sugar can be used.
Add ice cubes to the glass followed by apple juice, apple crisp simple syrup or maple syrup then sparkling water. Top the glass with the chilled butterfly pea flower tea. Pour it slowly over the ice cubes to create the layered look.
Garnish the blue tea mocktail with thin apple slices and/or dried butterfly pea flower. Stir to combine before enjoying. The drink will then be completely purple and no longer layered. Cheers!
