Think of an earl grey tea cream soda as a sparkling earl grey latte over ice. It is bubbly, sweet and creamy with strong notes of bergamot citrus. This caffeinated, fizzy beverage is a unique treat to reach for when you’re craving a cup of your favourite earl grey.
Begin by making a quick earl grey tea simple syrup. Add earl grey black tea to a pot with freshly boiled water. Cover and let it steep for 5 minutes. Add sugar and stir until fully dissolved. Let the earl grey syrup cool before making the earl grey cream soda.
To make the earl grey tea cream soda, add 2-3 tablespoons of the earl grey simple syrup to a glass with ice.
Add sparkling water to the glass until almost full. Leave a bit of room for the whipped cream.
Top the glass with whipped cream. Stir to combine and enjoy!

This recipe makes 1 glass but you can repeat and make more as there will be extra tea simple syrup.
