The 3 simple ingredients you’ll need for this tea infused cold foam are:

  • Heavy Cream/Whipping Cream: It should contain 35% milk fat to create the best texture and stable cold foam.
  • Milk: Adding milk helps to lighten the heavy cream so that this cold foam is pourable and not stiff peaks as you would have for whipped cream.

STEP ONE: Add the heavy cream, milk and Earl Grey simple syrup to a tall glass or jar.

STEP TWO: Using a handheld milk frother or an electric frother, froth the mixture until it is thick, smooth and pourable (about 15-20 seconds). 

STEP THREE: Slowly pour or spoon the earl grey cold foam on top of an iced drink. Serve and/or enjoy immediately.

What is Earl Grey Cold Foam made of?

This recipe is just 3 ingredients: heavy cream, milk and homemade Earl Grey tea simple syrup. 

Can I use store-bought Earl Grey syrup?

Yes, store-bought earl grey tea syrup will work as well.

Can I make Earl Grey Cold Foam without syrup?

Yes, you can infuse the heavy cream with Earl Grey tea for 24 hours before frothing (similar to my instructions on how to make tea infused whipped cream). However, using simple syrup is quicker and it produces a more pronounced flavour.

Also, the syrup sweetens the cold foam so if you make this without syrup, you can enjoy it unsweetened or you will need to add a different sweetener to the cold foam if you want it sweetened.

Why isn’t my cold foam thickening?

This may happen for a few different reasons: the ingredients aren’t cold enough, the cream has too little fat or the mixture hasn’t been frothed long enough.

Can I use other teas?

For a different tea infused cold foam flavour, you can use other teas. This method also works well with chai syrup, hojicha syrup, jasmine green tea syrup, chamomile syrup and more. Just simply use another tea simple syrup in place of the earl grey syrup.
