An Iced London Fog is a chilled version of the classic tea latte made with Earl Grey tea, milk, and vanilla. The cold foam is a slightly sweet and airy topping. It is typically made from a mixture of cream and milk.

Cold foam is often seen in iced coffee drinks but it is just as delicious over tea. This version features a lavender cold foam, giving it an extra layer of flavour and a soft floral aroma.

The balance of bergamot, vanilla, and lavender is both invigorating and calming. This is a super refreshing drink during a hot day and you don’t need to leave your house to order it at a cafe!

  • London Fog Concentrate: Make a batch of this tea concentrate at home in just a few minutes. This strong brew will give you the best flavour. 
  • Milk: You can use any milk that you would like for the Iced London Fog. For the cold foam, I think 1% or 2% milk works best.
  • Heavy Cream: This is needed to make a rich and velvety cold foam that holds its shape over iced drinks.

How to Make Iced London Fog with Lavender Cold Foam

Step 1: Fill a glass with ice. Add London Fog concentrate and milk, making sure to leave room at the top of the glass for the cold foam topping.

Step 2: Make the lavender cold foam. In a separate cup, combine cold heavy cream, milk and lavender simple syrup. Using a handheld frother, whisk until it is thick and airy. Be careful to not froth for too long, or you could end up with whipped cream instead!

Step 3: Pour the lavender cold foam over the Iced London Fog. Garnish with culinary lavender buds, if desired. Serve or enjoy immediately! 

Tips for the Best Cold Foam

  • Use cold heavy cream and cold milk. Straight from the fridge is best as cold foam will not hold its shape well if it is room temperature. 
  • Do not over-froth. Cold foam should be thick but still pourable. If you over froth it you will get stiff peaks and it will be more like whipped cream. Still tasty, but not cold foam. 
  • Chill your glass. Place the empty glass in the freezer for a few minutes prior to adding the cold foam ingredients and frothing. This will help you get a longer-lasting cold foam topping.
