This mocktail is made with an herbal tea known for its gorgeous blue colour: Butterfly Pea Flower.

Butterfly Pea Flower is also well-loved because of its magical properties as it will change to a purple shade when it is combined with acidic ingredients like citrus or even sparkling water.

This makes it a very exciting tea to create recipes with like blue lattes and blue cocktails or, in this case, mocktails.

This magical blue tea mocktail has a bold and tart taste from the apple juice and a splash of sparkling water to mimic bubbly alcohol.

It is also sweetened with your choice of apple crisp simple syrup to keep on theme or maple syrup. The herbal tea makes it an eye-catching beverage!

  • Water: The herbal tea should be steeped in freshly boiled water.
  • Apple Juice: This is the base of the mocktail and the main flavour.
  • Syrup: Use apple crisp simple syrup or maple syrup as the sweetener for this mocktail. 
  • Sparkling Water: This is slightly acidic so when combined with butterfly pea flower the colour will change from blue to purple!
  • Cocktail Sugar & Apple Slices: for rim and garnishing

Step-by-Step Instructions

Steep butterfly pea flower (loose leaf tea or tea bags) in freshly boiled water for 7 minutes. Cover the herbal tea while it is steeping.

Remove the loose leaves or tea bag and discard after the steeping process is complete. Let the butterfly pea flower tea cool then chill in the refrigerator until cold, approximately 1 hour.

To serve, start by rimming a glass with sugar. Wet the rim of a glass with apple juice or syrup then place the glass upside down in a dish of granulated or coarse sugar. I used a blue cocktail sugar for this drink, but plain sugar can be used.

Add ice cubes to the glass followed by apple juice, apple syrup or maple syrup then sparkling water.

Top the glass with the chilled butterfly pea flower tea. Pour it slowly over the ice cubes to create the layered look.

  • Serve this mocktail in a clear glass so that you can easily admire the colour-changing magic and beauty from this drink!
  • The layered look is achieved by making sure the bottom liquids are sweeter than the top liquids. That is why it is important to not sweeten the butterfly pea flower tea. Since it is unsweetened, it will stay on top of the sweetened apple juice for a bit instead of blending in immediately. 
  • This is a mocktail recipe, but you can turn this into a butterfly pea flower cocktail if you prefer. Add a shot of vodka, tequila or another liquor of your choice.
