In a small saucepan over medium-heat, combine brown sugar, water, apple juice, apple slices and cinnamon sticks. You can break the cinnamon sticks in half to get more flavour from them.
Bring it to a boil then reduce heat to simmer for 15 minutes. Stir the mixture occasionally to make sure the brown sugar dissolves completely.
Remove the apple crisp simple syrup from the heat. Pour it through a fine mesh strainer to remove the apple slices and cinnamon sticks.
PRO TIP: The apple slices will be sweet and flavoured with the cinnamon. Instead of tossing them out after straining, they can be saved to use on top of ice cream, pancakes, waffles, yogurt etc. They can also be mashed up to make an apple sauce.
