Carrot Ginger Tea Sandwiches

These easy Carrot Ginger Tea Sandwiches are full of great flavour with minimal ingredients. Naturally sweet carrot paired with zesty ginger offers a unique combination for afternoon tea or lunch time.

When I am planning an afternoon tea party at home I like offering a variety of tea sandwiches. Classic tea sandwiches like tuna salad are always a go-to but I like creating something different, too.

I have enjoyed carrot sandwiches at tea rooms in the past and the idea to add ginger to the mix was because of my love for the spice. The result was a fresh tasting sandwich with a kick of ginger in every bite.

This recipe is satisfying with just a handful of ingredients and pairs well with tea. I especially love it with black teas but it can be served with any type of tea during your next tea party!

Ingredient Notes

  • Bread: Don’t use thick bread. Thinly sliced white bread is best for tea sandwiches. 
  • Carrot: Grate enough carrots so you have approximately half a cup worth. I find that one medium-sized carrot does the trick. 
  • Ginger: To keep this recipe simple, I like to use minced ginger. 
  • Mayonnaise: The sandwich filling should be creamy, not dry!
  • Salt and Pepper, to taste

Easy Carrot Ginger Tea Sandwiches Recipe

In a small mixing bowl, combine the grated carrot, minced ginger, mayonnaise, salt and pepper. 

Spread half of the carrot-ginger mixture on a slice of bread and top it with another bread slice to close the sandwich. Repeat this step with the other 2 slices of bread.

With a serrated knife, remove the crust and cut each carrot-ginger tea sandwich into 3 rectangles or another shape, if desired. 

Serve and enjoy immediately!

Tips & Tricks

  • Tea sandwiches should be assembled and served immediately. Do not assemble them in advance as this will result in soggy sandwiches.
  • That being said, the carrot-ginger mixture can be prepared and stored in the fridge covered until ready to assemble and serve.
  • Remove the crusts from the bread with a long and sharp knife. If the knife is too short or too dull it will be difficult to cut and the tea sandwiches won’t look very presentable.

  • Tea sandwiches can be cut into halves, thirds or quarters. They can also be served in various shapes like rectangles or triangles. Cookie cutters can be used for fun shapes, too.
  • Typically, a variety of tea sandwiches are served with a minimum of 4 tea sandwiches per person.

Ingredients
  

  • 4 slices of white bread
  • 1 medium carrot peeled and grated (approximately ½ cup)
  • 2 teaspoons minced ginger
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste

Instructions
 

  • In a small mixing bowl, combine the grated carrot, minced ginger, mayonnaise, salt and pepper.
