What is Mint Simple Syrup?

Mint simple syrup is a liquid sweetener that is made with mint leaves, sugar and water.

Mint is an fragrant perennial herb that leaves a cooling sensation in the mouth.

This syrup is an easy and great way to add sweet and cool minty flavour to drinks or other recipes. Since it is a liquid, it easily dissolves in hot or cold beverages, too.

This easy mint syrup recipe requires equal parts of only 3 ingredients!

Mint

For the best flavour, fresh mint is recommended in this recipe. You can use any mint variety. I used whatever I have in my garden because mint grows like crazy so there is A LOT.

Sugar

White granulated sugar works is recommended, so the syrup will have a light yellow/golden hue. I have not tested this recipe with sugar substitutes.

Water

For best results, use filtered water if possible.

How to Make Mint Simple Syrup (for tea and other drinks)

In a small saucepan over medium-heat, combine fresh mint leaves (don’t forget to wash them really well prior to), granulated sugar and water. Bring to a boil, stirring occasionally to dissolve sugar. 

Remove from heat, cover and let the mint leaves steep for 20-30 minutes.

When the time is up, pour the simple syrup through a fine mesh strainer to remove the mint leaves and any tiny particles. 

Let the syrup cool. It will slightly thicken as it cools.

Pour the syrup into a sterilized airtight container. Store in the refrigerator for up to 1 month. 

Use this mint simple syrup to sweeten and flavour iced teas, cocktails or mocktails, lattes, lemonade, granita and more. Start by using 1 tablespoon per 1 cup and adjust to taste.

Tips & Tricks

  • Crush or muddle the fresh mint leaves as this releases their oils and gives you the most flavour.
  • Cover while steeping is important so the essential oils don’t escape with the steam.
  • The longer the mint leaves steep, the stronger the mint flavour will be. However, it can become bitter if it steeps for too long so be cautious. I find 30 minutes is perfect — not too strong or weak.
  • Simple syrup should last a few weeks if stored properly. You can tell if it has gone bad by the appearance. If it is no longer clear and instead cloudy, then it has gone bad.

Ingredients
  

  • 1 cup fresh mint leaves washed
  • 1 cup water
  • 1 cup granulated sugar

Instructions
 

  • In a small saucepan over medium-heat, combine fresh mint leaves, water and granulated sugar. Lightly crush or muddle the fresh mint leaves to help release their oils. Bring to a boil, stirring occasionally to dissolve sugar. 
  • Remove from heat, cover and let the mint leaves steep for 20-30 minutes. Covering while steeping the mint leaves is important so the essential oils don’t escape. This will help make sure the simple syrup is flavourful.
  • When the time is up, pour the simple syrup through a fine mesh strainer to remove the mint leaves and any tiny particles. 
  • Let the mint simple syrup cool. It will slightly thicken as it cools.
  • Pour the syrup into a sterilized airtight container. Store in the refrigerator for up to 1 month.
