A Canadian-exclusive spring menu dropped earlier last month at Starbucks. One of the new drinks was geared towards tea drinkers, especially matcha lovers. The new Iced Strawberry Oat Matcha Tea Latte from Starbucks features matcha green tea, strawberry flavoured syrup and oat milk. Since this latte is only available for a limited time, I wanted to make my own version. My iced strawberry matcha latte recipe is absolutely delicious and incredibly eye-catching with the green, white and red layers. Bright, vegetal matcha is paired with intense, sweet and juicy strawberry flavours.

Ingredients You Will Need
- Matcha: Use your favourite matcha powder in this recipe. If you need some recommendations for the best matcha to use in lattes though, check out my list below.
- Water: Put the tea kettle away! The matcha will be prepared with cold water, not hot.
- Milk: I like to use dairy milk or oat milk for an iced strawberry oat matcha tea latte.
- Strawberry Simple Syrup: Make this fruit simple syrup at home by following this easy recipe.
- Ice: Not only does ice make this latte cold and extra refreshing, but it also helps with getting that eye-catching layered latte look!
- Fresh Strawberries (optional): Add real strawberries pieces to the latte, if desired. I recommend chopped strawberries in the base of the latte or garnish with sliced strawberries.

For a layered drink, pour the milk and matcha slowly over the ice cubes. Pouring too fast may make the ingredients mix together. The ingredient order is important here, too. When you pour something with a lower sugar content on top of a high sugar content, they will stay separated. That’s why the order for this layered matcha latte is strawberry simple syrup, milk then matcha.
If you would prefer to make a hot strawberry matcha latte, whisk matcha in under boiling water and steam milk before assembling. Also, be sure to omit ice!
Matcha is a high caffeinated green tea powder, so yes there is caffeine in this latte.
You can make this a vegan strawberry matcha latte by using dairy-free milk. I just recommend picking one that is more neutral so it doesn’t take over the strawberry matcha flavour. If you want to make this recipe so that it’s more similar to the Starbucks version, use oat milk.

How to Make an Iced Strawberry Matcha Latte

STEP ONE: Make the strawberry simple syrup.
Strawberry simple syrup requires only 3 ingredients. You’ll need to make it first and give it time to cool down and chill before using. Get the easy recipe here.
STEP TWO: Prepare matcha, cold brew style.
In a bottle or jar, sift matcha powder and add cold water. Seal with a lid and shake vigorously for about 15-20 seconds. The cold brew matcha should be smooth, with no signs of clumps.
STEP THREE: Assemble the strawberry matcha latte.
Add strawberry simple syrup to a glass then fill with ice. I like about 4 tablespoons of the simple syrup with this latte, but you can add more or less. Start with less, as you can always add more later!
Slowly pour the milk over the ice cubes, followed by the cold brew matcha.
Pouring these two ingredients slowly and directly onto the ice cubes will give the drink a layered look.
Stir the drink to combine before enjoying!
Optional: Add some diced strawberries to the glass with the ice before adding milk and matcha. Garnish the finished latte with sliced strawberries, too.
