This recipe is a very easy and exciting option for an alcohol-free green beer. Ginger beer on its own can be intensely spicy, at least for me! That’s why I prefer it mixed with other ingredients. When combined with matcha the earthy and vegetal notes cool it down a bit and make this all-natural green beer more refreshingly sweet. The spicy brightness of ginger is definitely still there though. No food colouring or green dye is needed for this matcha ginger beer thanks to the green tea powder. Instead, all that is needed are 3 simple ingredients: matcha, water and your favourite ginger beer!
What is Ginger Beer?
Despite the name, ginger beer is a non-alcoholic drink today.
However, in the late 1800s, ginger beer was made differently. It used to contain yeast and the fermentation process gave it a small amount of alcohol and “beer” label.
These days ginger beer is more like a soft drink. It’s carbonated and sweetened with ginger flavouring. Although, it should not be confused with ginger ale.
The main difference between ginger beer and ginger ale is that ginger beer is more potent. The ginger flavour is definitely stronger and spicier when compared to ginger ale.
Even though there is no alcohol in today’s ginger beer, it is a popular ingredient for mixed drinks. If you’re not familiar with it on its own, you may have tried it before in a Moscow Mule or Dark ‘n’ Stormy!
Ingredients and Tools
As mentioned, only 3 ingredients are required for this quick recipe plus a couple of tools!
Matcha
If you want a vibrant green beer, use good quality matcha! Find some of the best matcha powders here.
Ginger Beer
If you have a favourite ginger beer brand already, use it in this recipe! But, if you’re looking for suggestions check out these best ginger beer brands. This drink is mainly ginger beer, so you need to make sure you like the taste of the one you are using first!
Water
A small amount of cold water is used to mix the matcha before topping with the ginger beer. I prefer using water instead of a bit of ginger beer so that the green tea powder is extra smooth. Plus, you can safely shake it without worrying about carbonation.
Bottle with Lid
Since this recipe doesn’t involve any heat, it means we are essentially cold brewing the matcha concentrate prior to combining with the ginger beer. To do so, a resealable bottle like a shaker botter, water bottle or even a mason jar is needed.
Serving Glass
This matcha ginger beer will be very fizzy at first. It’s best served in a tall and narrow glass.

How to Make Matcha Ginger Beer
This recipe makes about 1 ¾ cups, generally served to one but can be split to serve two.
Here’s what you will need:
1 teaspoon matcha
¼ cup water
1 bottle of ginger beer (355 mL)
Directions:
This recipe starts by making cold brew matcha. There is no heat or hot water required. Sift matcha into a resealable bottle or jar. Add cold water, seal and shake vigorously until smooth.
In a tall and narrow glass, pour the cold brew matcha then fill the rest of the glass with ginger beer. There will be a lot of fizz at first, but the carbonation will eventually settle.
Serve and/or enjoy immediately. Cheers!
Alternatively, you can swap the ginger beer for actual beer or non-alcoholic beer to make a green beer without the green dye.
