However, most often the pumpkin latte doesn’t really taste like pumpkin. Instead, it has notes of spices that are common during pumpkin season. If you want real pumpkin in your lattes, this easy Pumpkin Spice Syrup recipe is a must try. You can make your own pumpkin spice drinks at home with just a few teaspoons. Made with pumpkin puree, sugar, and a homemade pumpkin spice blend, this simple syrup is ready in just a few minutes so you can embrace the short PSL season as soon as possible.
What is Pumpkin Spice Syrup?
Pumpkin spice syrup is a simple syrup that is used to flavour and sweeten coffee-based lattes and tea lattes. This liquid sweetener can also be used for pumpkin spice cocktails and desserts.
Homemade pumpkin spice syrup is very different from most store-bought pumpkin simple syrups.
This homemade recipe is made with real pumpkin and does not have any added food colourings or chemical flavourings.
Homemade Pumpkin Spice Blend
Pumpkin Spice is a mix of spices that are used to flavour a pumpkin pie.
The pumpkin pie spice blend can be purchased at the store, but it’s ridiculously simple to make your own pumpkin spice blend at home. You most likely already have all of the spices needed, too!
This easy pumpkin flavoured syrup recipe has instructions to mix your own blend of spices, so you don’t need to go out and buy anything special.
Pumpkin Spice is a blend of ground cinnamon, ginger, nutmeg and cloves. Sometimes all-spice is used, too.

An important ingredient for this recipe is the pumpkin puree. You can not have real pumpkin taste without real pumpkin!
Unsweetened pumpkin puree is required. I used canned puree, but fresh is an option as well. If using canned though, make sure it is not pumpkin pie filling.
Pie filling may already contain spices and sugar. While it may seem like a time saver, it would give this syrup a different flavour and make it too sweet.
How to Make Pumpkin Spice Syrup
This recipe will make about 1 cup of simple syrup. Depending on your taste preferences, you only need 1-2 tablespoons of it per drink. So, this recipe is great to make ahead and have pumpkin spice lattes all week long!
Here is what you will need:
¼ cup pumpkin puree, fresh or canned (but not pumpkin pie filling!)
½ teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 cup water
¾ cup white granulated sugar
Directions
In a small saucepan over medium heat, add the pumpkin puree and all of the ground spices. Mix and cook for about 1 minute to remove the raw pumpkin taste.
Add water and sugar to the saucepan. Heat and stir until sugar dissolves and pumpkin puree is blended in. Bring to a boil.
Remove from heat. Pour through a fine mesh strainer into a glass jar or bottle. The strainer will help remove any sediments from the syrup, if needed.
Let cool then seal and store in the refrigerator for up to 2 weeks.
How to Use Pumpkin Spice Simple Syrup
Use 1-2 tablespoons per cup to sweeten lattes, cocktails and more with pumpkin spice flavour! Adjust the amount to taste.
Try it with a variety of teas such as matcha, hojicha, english breakfast, chai and oolong teas.
You can even drizzle this on top of ice cream, oatmeal, pancakes, waffles, yogurt and more!
Since this pumpkin spice simple syrup contains real pumpkin it may separate over time. If you notice the pumpkin has settled to the bottom of your syrup bottle be sure to shake before using.

Hi Vanessa, it is best if cooled and chilled before using so I would prepare it about a half an hour to an hour in advance. You can store it in the fridge for up to 2 weeks, too. I hope that answers your question!
