Sometimes when I don’t know what to do, I just start baking scones. I can’t get enough of them. Whenever I head out to afternoon tea, I am always looking forward to the moment the scones are brought to the table with a fresh pot of tea. Another reason I love scones is because they are pretty quick to make. They’re easy enough to whip up first thing in the morning for a breakfast treat with your morning cup of tea. These blueberry scones have been my go-to lately. I love them as is, but you can enjoy these scones with clotted cream and preserves if you wish.
For this blueberry scone recipe, you can use either fresh or frozen blueberries. However, if you use frozen blueberries, be sure to not let them thaw before adding them to the batter or you will discolour it. Sometimes I’ll even buy fresh blueberries, wash and freeze them prior to making the recipe.

Love how the blueberries look in these. I have to admit, I always assumed that scones were supposed to be hard because that is how they always were when I ever tasted them. However, when I went to high tea in February, it was so fluffy!
