Tropical Rooibos Iced Tea

Although I drink hot tea 365 days of the year, it’s beginning to heat up so pouring my tea over ice is sometimes a must. The most recent tea I decided to ice happened to be a rooibos that I had fun blending myself just for this drink. I used a red rooibos with two herbs and a spice, and because I felt like something more fruity, after the rooibos blend steeped and cooled, I mixed in pure pineapple and orange juice! The cold juices were also a nice way to cool off the tea a bit quicker. Of course, when complete you should serve this tropical rooibos iced tea in a glass filled with ice, but if you want to use something else that won’t dilute the tea, then check out the recipe for a fun tip!

This rooibos iced tea recipe uses a red rooibos, which is more oxidized and richer than a green rooibos.

I find that the rooibos offers notes of vanilla and geranium in this iced tea which pairs nicely with the additional tropical and citrus flavours.

Tropical Rooibos Iced Tea

This rooibos iced tea recipe begins with an herbal blend, and includes tropical and citrus juices that make it a thirst-quenching drink for the summer!

Ingredients

  • 2 cups water
  • 4 teaspoons red rooibos
  • 2 teaspoons lemongrass
  • 1 teaspoon cornflowers
  • 1 teaspoon red peppercorn
  • 1/4 cup unsweetened pineapple juice
  • 1/4 cup freshly squeeze orange juice
  • 1 tablespoon sugar
  • ice cubes (or frozen pineapple chunks!*)

Instructions

    1. While waiting for water to boil, create your own herbal tea blend by adding the rooibos, lemon grass, cornflowers and peppercorns directly to a heatproof pitcher, or an infuser.

    2. When the water reaches a full boil, pour it over the herbal tea blend and allow it to steep for 5 minutes.

    3. After steeping, discard the herbal tea blend by removing the infuser or using a fine mesh strainer.

    4. Stir in the sugar (or another sweetener of your choice) until it dissolves in the hot tea and then the pineapple and orange juice.

    5. Serve into glasses filled with ice cubes or frozen pineapple chunks. You can also refrigerate for a couple of hours before serving. Enjoy!

Notes

*Try replacing ice cubes with frozen pineapple chunks! This goes really well with this tropical iced tea, and you won't risk watering down your iced tea.
