Hello and thank you for this awesome article! I did an online search about whether it's possible to cold brew all tea (I live in Germany and just recently found tea that is in tea bags and sold specifically to cold brew). This is so exciting for many reasons, but also, I was concerned about tannins (possibly unfounded, I still don't know how bad they really are) because I drink so much white tea. If I had known white tea can be cold brewed I'd have already been doing it a long time! Thanks again for this awesome article! And I'm looking forward to checking out more on your website.

From what I have learned from my herb teacher, its ok. However, not recommended for anyone with autoimmune issues or serious health problems. I personally would not leave out over 8 hrs at room temperature.

Thank you once again for sharing your knowledge and inspiring us! With regard to the Douglas Fir Spring Tip Tea (I purchased mine from Juniper Ridge), it has a unique flavor. It is also delicious when added as an ingredient to shortbread!

I plan to make more 'cold brew' teas when I see my family this weekend... thank you once more!

Hi Patte, thanks for writing to me! I have not tried Douglas Fir Tip as a cold brew yet, you have inspired me to try that next time. I hope you enjoy your tea time with family and friends. :)

Thank you very much for you lovely site.
I just made two different types of cold brew tea:
1). Douglas Fir Tip
2). Green Tea w/ Roasted Rice (Genmaicha)
I love them both hot... but hadn't tried them cold. As a cold brew, they are refreshing for summer and brings out a slightly different flavor. I look forward to serving them to family & friends.
Once again... thank you! I look forward to your next email.

Hi Kristen, yes, the tea will continue to steep while the leaves are in the pitcher. With cold brew though, I don't find that it gets bitter, but it will get stronger. You can dilute it with extra cold water if that's the case or you can choose to remove the tea leaves if you're keeping the cold brew tea in the fridge for longer than a day.
