Autumn is probably my favourite season of them all but today I’d like to help us all hold on to summer just a little while longer. After all, we still have a few days left of it officially! Usually iced teas are my go to for the season, but cold brew teas have become quite popular and I couldn’t pass up the opportunity to create a recipe with this method.But, why cold brew? Well, the cold brewing method draws out fewer tannic compounds which results in a lighter-bodied tea. This means less astringency and bitterness which is great for a refreshing beverage. Cold brewing also has the advantage of being more time efficient. This is probably one of the reasons I started to love this method. You don’t have to worry about steeping a batch of tea every day when you want something iced. Simply take a pitcher with tea and fill it with cold water to set in the refrigerator for a few days and enjoy whenever!
Lavender and lemonade are both things I associate with summer. With lemonade though, I like to be able to control the sweetness. I have never been a huge fan of store bought lemonade because of that reason. With a quick glance at the ingredients to this recipe I’m sharing it may seem like it is hardly lemonade because of the lack of lemon juice required. Trust me though when I say you will get a great lemony, citrus taste when it is all said and done. It’s not just the lavender herbal tea blend that is cold brewing overnight in the pitcher, you have the lemon slices as well that will work their magic. If the next morning, after it has steeped, you wish for more lemon flavour simply top it off with more freshly squeezed lemon juice.
For this recipe, I actually used a lavender herbal tea blend. While the lavender was the star of the blend, it also consisted of lemon myrtle, hibiscus, and marigold petals that I thought worked nicely for this cold brew. If you don’t have something similar, just dried lavender buds will work perfectly on its own.

That looks good, and easy! I will do this tomorrow! I've never made iced tea before other than hot tea I decided not to drink that I refrigerated overnight. This looks perfect for the upcoming hot week-end. Love the music too!
Ooh I might try this one day. I love cold brewing. I have a yerba based tropical tea that is great cold from the jug.
