Water temperatures and steeping times varies with each type of tea. You have to be gentle with certain delicate tea leaves such as Green & White tea as if you use to hot of water you can actually burn the leaves which will cause the tea to have a horrible, bitter taste. This may actually be the reason why some people are not a fan of green tea as it is not prepared properly.
As a guide, here are the general temperatures and steeping times:
– Black Tea: boiled water, 4-6 minutes
– Green Tea: 150-160F, 2-3 minutes
– Oolong Tea: 190F, 5-7 minutes
– Rooibos Tea: boiled water, 5-7 minutes
– White Tea: 180F, 4-6 minutes
– Most Herbal Teas: boiled water, 5 minutes

When preparing your tea, the water is a vital part of the process. Always be sure to use fresh water (not leftover in the kettle). Reboiling water will change the colour of the tea and will not bring you the full flavour of the tea you steep.
